Ingredients

  • 175g strong bread flour.
  • 175g 00 flour.
  • 3 tbsp extra-virgin olive oil.
  • 7g fast-acting yeast.
  • Pinch of salt.
  • 200ml warm water.

METHOD

  1. Attach the dough hook to a stand mixer, and place all ingredients except water into the bow.
  2. Start mixing on speed two, gradually adding water until the dough is soft and smooth.
  3. Knead in the mixer for 5 minutes.
  4. Transfer the dough to an oiled bowl, cover, and let rise in a warm place for about 1 hour, until doubled in size.
  5. Afterward, divide into four portions, place on a tray with space between them, and let rise again until doubled.
  6. Roll each dough ball into a small circle, then stretch it to form a large round base.
  7. Add passata, leaving a 1 cm border for the crust, then add desired toppings.
  8. Bake on a preheated pizza stone at 250°C for a few minutes.
  9. Slice and garnish with fresh rocket to serve.
