METHOD
- Attach the dough hook to a stand mixer, and place all ingredients except water into the bow.
- Start mixing on speed two, gradually adding water until the dough is soft and smooth.
- Knead in the mixer for 5 minutes.
- Transfer the dough to an oiled bowl, cover, and let rise in a warm place for about 1 hour, until doubled in size.
- Afterward, divide into four portions, place on a tray with space between them, and let rise again until doubled.
- Roll each dough ball into a small circle, then stretch it to form a large round base.
- Add passata, leaving a 1 cm border for the crust, then add desired toppings.
- Bake on a preheated pizza stone at 250°C for a few minutes.
- Slice and garnish with fresh rocket to serve.
