METHOD
- Separate the egg whites from the yolks.
- In a bowl, combine the oil, water, yolks, orange zest, and orange juice.
- Begin whipping the egg whites with a pinch of salt, and once partially whipped, add the cream of tartar to help maintain firmness.
- Preheat the oven to 160°C.
- In a separate bowl, mix together the dry ingredients: flour, baking powder, and sugar.
- Gradually add the oil and juice mixture to the dry ingredients, blending well.
- Gently fold in the whipped egg whites, using a motion from bottom to top to retain the airiness.
- Pour the batter into a mold and bake at 160°C for 45-50 minutes.
